Orange Peel

Citrus peels contain a wealth of aromatic oils that lend a pungent tartness to recipes. Fresh zest is preferable to dried peel, yet when not accessible, rehydrating the peeled material in some warm liquid renders a suitable alternative. Orange peels are a great addition to tea, mulled wines, and cider.
