Maple Mustard Pork Loin Chops

¼ tsp Fennel Seeds, crushed

6 boneless pork loin chops (½ inch thick)
1½ tbsp brown sugar
1½ tsp sea salt
¼ cup pure maple syrup
2 tbsp spicy brown mustard
½ cup seasoned bread crumbs
1 tbsp olive oil
1 tbsp canola oil
1 clove garlic, crushed
Instructions
- Whisk together brown sugar, sea salt, garlic powder, onion powder, paprika, black pepper, dry mustard, and fennel seeds in a small bowl.
- Pat pork chops dry. Score both sides in a cross-hatch pattern (⅛-inch deep, ½-inch apart). Rub the spice mixture into all surfaces and scored lines. Cover and refrigerate 4-6 hours.
- Make the glaze: whisk maple syrup, brown mustard, and a pinch each of garlic powder, paprika, black pepper, and cayenne. Set aside.
- Coat the marinated chops with seasoned bread crumbs on all sides.
- Heat olive oil and canola oil in a large skillet over medium-high. Add garlic and cook until fragrant and lightly browned, about 1 minute. Remove and discard garlic.
- Add chops to skillet in batches (don't crowd the pan). Brown 2-3 minutes per side. Return all chops to skillet, reduce heat to medium. Drizzle half the glaze over chops, flip, cook 1-2 minutes. Add remaining glaze, flip again, cook another 1-2 minutes.
- Reduce heat to low, cover, and cook until internal temperature reaches 145°F (63°C), about 5 minutes. Rest briefly before serving.
