What it’s like, and how to make it

CaffeineCaffeine free
TypeRooibos
FlavourBlueberry
CharacterSweet, earthy
What’s in itrooibos, hibiscus, apple, elderberries, currants, blueberries, bilberries, cornflower petals

Perfect for

  • Beginners
  • Iced tea
How to brew it
  • 212°F / 100°C
  • Steep 5–7 minutes
  • Use 1–2 tsp per 8oz
  • Cannot over-steep: no tannins, so no bitterness however long you leave it

Beyond the cup

Cold brew this one — the blueberry pops when it’s iced. Reduce with sugar for a berry syrup on pancakes, waffles, or cheesecake. Steep into cream for a blueberry panna cotta. Brew alongside a cheese board — the tartness from the hibiscus actually cuts through rich cheese.

What’s in it

Every herb in the blend, and where to read about it on its own.

  • Herb · Caffeine-free

    Hibiscus

    Hibiscus sabdariffa

The tart red one, and the ingredient whose colour is the point: those anthocyanins make a cup that is genuinely ruby, not brown. Hibiscus has been studied more than almost any other herbal infusion, and unusually the studies used the tea itself rather than an...

    Tart, cranberry-like, fruity, deeply colored

  • Herb · Caffeine-free

    Elderberry

    Sambucus nigra

The dark berry of the cold season in European tradition — elderberry syrup is one of those things a grandmother made. Its anthocyanins are the same class of pigment as hibiscus's, which is the chemistry behind how often the two are blended. One honest note...

Deep berry, slightly tart, earthy undertones, wine-like when concentrated

    Rooibos

    Aspalathus linearis

Not tea. Rooibos is a needle-leaved shrub of the pea family that grows in one mountain range in the Western Cape and nowhere else, and since 2021 the name has been legally reserved for it. It is the base of thirty-three products here for one...

Honey, dried fruit and vanilla with a little wood; smooth, naturally sweet, never bitter. Green rooibos is malty and slightly grassy

  • Fruit · Caffeine-free

    Apple

    Malus domestica

Dried apple pieces are the workhorse of fruit tea, and twenty-six products here carry them — more than any other fruit. They are doing a structural job rather than a flavour one: apple gives a fruit infusion its body and a mild background sweetness, and...

Mild, sweet and lightly tart, with a soft body; it rounds out a blend rather than leading it

    Blueberry

    Vaccinium spp.

Dried blueberries and sometimes the leaf — seven products carry one or the other. The berry brings a deep, slightly winey sweetness and the anthocyanins that make a cup go purple-red; the leaf, like strawberry leaf, brings tannin and body rather than fruit. For a...

Deep, winey sweetness with a soft acidity; stains the cup purple-red

  • Flower · Caffeine-free

    Cornflower

    Centaurea cyanus

The blue in your tea. Cornflower petals are in eighteen products here and they are there to be looked at: the pigment, protocyanin, is one of the few真 blues in the botanical world, and it survives drying where almost nothing else blue does. They contribute...

Almost nothing — a faint clove-like sweetness at most. It is in the blend for the blue

    Currant

    Ribes spp. (see note)

The label says only currants, which is genuinely ambiguous, and this profile will not pretend otherwise. The word covers two unrelated things: Ribes berries — black, red and white currants, which are what a fruit tea usually means — and Zante currants, which are small...

Tart and deep if Ribes; sweet and raisin-like if dried grape — which is exactly why the label matters

  • Fruit · Caffeine-free

    Bilberry

    Vaccinium myrtillus

Europe's wild blueberry, and a genuinely different fruit from the cultivated kind. Bilberries carry their anthocyanins in the flesh as well as the skin, where a cultivated blueberry has them mostly in the skin — so a bilberry stains everything, tastes more intense, and turns...

More intense and winey than a blueberry, with the colour running right through the flesh

The maple peach is delicious. What a beautiful combination. I will most definitely order it again, and a higher quantity of it.

Always handy

I use dillweed often. This dill is fresh and has a nice aroma. I use it in marinades, salad dressings, and on fish. Good stuff.
