How to brew it
  • 212°F / 100°C
  • Steep 5–7 minutes
  • Use 1–2 tsp per 8oz
  • Cannot over-steep: no tannins, so no bitterness however long you leave it

Beyond the cup

The purest rooibos — and the most versatile. Steep into cream for a honey-vanilla panna cotta. Use as a braising liquid for pork or lamb — it adds sweetness without overpowering. Reduce into a syrup for pancakes. Smoke fish or chicken over dry rooibos leaves in a covered pan. Substitute for water in any baking recipe — it won’t go bitter.
