How to use it

Keep a whole nutmeg and a microplane in the kitchen — a few swipes over eggnog, custard, béchamel, or oatmeal changes everything. Fresh-grated nutmeg is a different spice from the jar. One whole nut lasts months of daily grating. Bring it to the table for pasta night — it's the Italian way. Freshly grated is best — a few swipes on a microplane per dish. Essential in béchamel, eggnog, pumpkin pie, and nutmeg-dusted custard. A pinch in scrambled eggs or mac and cheese is the quiet upgrade nobody can identify but everyone notices. Also the secret in many pasta dishes — Italians grate it into ricotta fillings and cream sauces.
