How to use it
Morocco's 'top of the shop' blend — the name means exactly that. Rub on lamb shoulder before slow-roasting. Stir into tagines, couscous, and chickpea stews. One teaspoon transforms a pot of rice. The allspice and cinnamon give it a warm sweetness that rounds out the chiles. Also brilliant mixed into ground lamb for Moroccan meatballs or stirred into carrot soup.
