How to use it

The lamb herb. Crush a pinch into olive oil with garlic and rosemary, rub on lamb before roasting. A quarter teaspoon — no more — into ratatouille, roasted vegetables, or goat cheese. Mix into honey for a lavender-honey glaze. Essential rule: less is more. Too much turns perfumy. Combine with rosemary and thyme for a Provençal-style rub.
