How to use it

Whatever it is doing in the blend it sits in. For real chai, the method matters more than the mix: boil the spices and tea in water, then add milk and sugar and bring it back to a boil, rather than steeping anything.

What happened

Masala chai is an Indian recipe before it is anything else: strong black tea, usually CTC, boiled rather than steeped, with milk, sugar and a handful of whole spices. The chai stall is its home. The word chai simply means tea — so chai tea, strictly, says tea twice — and it travelled overland along the routes where tea was called cha, while the sea routes said te. In Kashmir the same idea goes a different way entirely: noon chai, green tea boiled for an hour with baking soda until it turns burgundy, then milk to turn it pink, and salt, because noon is the Kashmiri word for salt.
