How to brew it
  • 195°F / 90°C
  • Steep 3–5 minutes
  • Use 1 tsp per 8oz
  • Re-steep three or four times; it changes character with every round

Beyond the cup

Smoked Maple Oolong reduced with maple syrup into a glaze for pork chops or salmon. Maple, Eh! in pancake batter, Maple Peach as a glaze for pork tenderloin. Icewine brewed cold as a dessert drink, and Bella Coola brewed by the jug for the fridge in summer.
