How to use it
Béarnaise sauce starts here — this is the herb that defines it. The cornerstone of French fines herbes (tarragon + chervil + parsley + chives). Stir into tarragon chicken, tarragon vinegar, or Dijon-tarragon dressing. A teaspoon in scrambled eggs is a revelation. Narrow but deep — tarragon does a few things perfectly.
What it goes with
Here's the surprise: tarragon's strongest tea bridge isn't through its anise character but through β-ionone, a violet-floral compound it shares with black tea at character-defining levels. Brew our Darjeeling or Keemun alongside béarnaise — the floral resonance is genuine. Our Masala Chai bridges through shared eugenol.
