How to use it

The connoisseur's cinnamon. More delicate and complex than Indonesian or Saigon — floral, citrusy, gently sweet. Use where cinnamon is the star, not just a supporting player: custards, crème brûlée, poached fruit, or stirred directly into coffee. The only cinnamon safe for daily use if you're adding it to your morning routine.

What it goes with

Ceylon cinnamon and our Darjeeling are the most elegant pairing in the shop — both share the same floral compound (linalool) that gives them their delicate complexity.
