What’s in itancho chiles
How to use it
The foundation of Mexican cooking. Ancho is a dried poblano — mild, sweet, and fruity with a hint of smokiness. Rehydrate whole pods in hot water for 15 minutes then blend into sauces, or use the powder directly in mole, enchilada sauce, chili con carne, or taco fillings. One to two tablespoons per pot of chili. Also great as a rub on pork shoulder or stirred into black bean soup. Almost no heat — all flavor.
What it goes with
Dried ancho produces the same violet-scented compound (β-ionone) that defines our Darjeeling's muscatel character. Brew a cup alongside mole or enchiladas for a pairing built on shared chemistry. For something robust with chili con carne, our Assam has the malty backbone.
