How to use it

The backbone of Thai curry paste and tom kha gai soup. Soak in warm water for 5 minutes, then slice thin or pound in a mortar. Simmer in coconut milk for laksa, rendang, and satay sauce. Add to stir-fries in the last 2 minutes. Not a ginger substitute — the flavor is sharper, more piney, more complex.
