Savory is the most popular herb for beans and peas, but its woody, thyme-like richness is an essential flavor in many dishes. Savory can be used instead of sage in poultry stuffing, and is often found in sausage-making recipes. It's also a pleasing herb in soup.

How to use it

The bean herb — add a teaspoon to every pot of beans, lentils, or peas. Traditional in German, French, and Bulgarian cooking. Mix into sausage, stir into stuffing, or sprinkle on roasted vegetables. Think of it as thyme's peppery cousin — use it wherever you'd use thyme but want more bite. Mix a teaspoon into ground pork for sausage or meatloaf. Stir into bean soups, lentil stews, and split pea soup at the start of cooking. Blend into pâté, season stuffing, or add to herb rubs. Ground savory dissolves completely — pure peppery herb flavor without texture.

What it goes with

Bean soup and a bold tea — that's comfort. Brew our English Breakfast or Irish Breakfast alongside a pot of savory-spiced lentils. The tannins cut through the starch and fat. For lighter dishes, our Ceylon's brightness complements savory's peppery edge.

Always handy

I use dillweed often. This dill is fresh and has a nice aroma. I use it in marinades, salad dressings, and on fish. Good stuff.
