How to brew it
- 212°F / 100°C
- Steep 3–5 minutes
- Use 1 tsp per 8oz
- Past five minutes it turns bitter
- Takes milk better than any other leaf
Beyond the cup
The secret weapon. Brew a concentrate (2 tsp in 6 oz, 3 minutes) and use as a 1:1 liquid smoke substitute in any recipe. Grind dry leaves to a powder in a spice grinder – add 1–2 tsp to chili, lentil soup, split pea soup, or hummus for instant depth. Infuse into a simple syrup for smoky cocktails.
