How to brew it
- 175°F / 80°C
- Steep 4–5 minutes
- Use 2 tsp per 8oz, the leaf is fluffy
- The longest steep at the lowest heat; never boiling
Beyond the cup
Steep into cream overnight for a floral panna cotta or custard base – the honey-melon notes come alive in dairy. Cold brew 8–12 hours for the smoothest iced tea you’ll ever pour. Infuse into butter over low heat for 5 minutes, strain, and use on steamed fish or scones. Make a simple syrup for cocktails – white tea and gin is a thing.
