How to brew it
- 212°F / 100°C
- Steep 5–7 minutes
- Use 1–2 tsp per 8oz
- Cannot over-steep: no tannins, so no bitterness however long you leave it
Beyond the cup
Cold brew overnight for peach iced tea that beats anything from a bottle. Steep into cream for a peach panna cotta. Reduce with sugar for a peach syrup — drizzle over vanilla ice cream, yogurt, or pound cake.
