How to brew it
- 212°F / 100°C
- Steep 3–5 minutes
- Use 1 tsp per 8oz
- Rinse the leaf first with a ten-second pour-off, then brew
Beyond the cup
The dim sum tea. Brew a pot alongside dumplings, spring rolls, or anything fried – it cuts grease gently, without the sharp bite of black tea. Use as a braising liquid for pork belly – the earthiness deepens the sauce in ways soy sauce alone can’t. Steep into cream for an ice cream base that tastes like the forest floor met a dessert menu. Makes incredible tea eggs – crack hard-boiled shells and steep overnight with soy sauce, star anise, and cinnamon.
What it goes with
The charcuterie board tea. Sip alongside aged Gouda, prosciutto, and dark chocolate – pu-erh’s earthy depth matches fermented and aged flavours like nothing else. Grab our Chinese Five Spice for tea eggs or our Star Anise and Cinnamon Sticks for a pu-erh braised pork belly.
