How to brew it
- 212°F / 100°C
- Steep 5–7 minutes
- Use 1–2 tsp per 8oz
- Cannot over-steep: no tannins, so no bitterness however long you leave it
Beyond the cup
The tea IS the dessert. Steep into cream for an apple-cinnamon custard. Reduce with brown sugar into a syrup for pancakes, waffles, or ice cream. Use as the liquid in apple cake batter — brew strong, let cool, swap for water. Steep into cider for a non-alcoholic mulled cider.
