Honeybush originates from the Cyclopia plant of the coastal regions of the Cape Provinces of South-Africa. It is caffeine-free and low in tannins all while boasting a flavor that is smooth, sweet, and fruity. It is also high in antioxidants, vitamin C, potassium, calcium, and magnesium.

How to brew it
  • 212°F / 100°C
  • Steep 5–7 minutes
  • Use 1–2 tsp per 8oz
  • Cannot over-steep: no tannins, so no bitterness however long you leave it

Beyond the cup

Sweeter and fruitier than rooibos — like apricot jam in a cup. Steep into cream for a honeyed panna cotta. Reduce into a floral syrup for cocktails, pancakes, or drizzling over ricotta toast. Use as a poaching liquid for stone fruit — the honeybush and peaches were made for each other.
