How to use it

The simmering cinnamon. Drop a stick into mulled wine, apple cider, chai, or rice pudding and let it steep. Stir your coffee or hot chocolate with one. Toss into poaching liquid for pears or plums. The slow release prevents the one-note blast you get from ground — it layers the flavor over time. The all-purpose cinnamon. One teaspoon per batch of cookies, half a teaspoon in oatmeal or toast. The smoothest and most familiar variety — sweet and warm without the burn of Saigon or the delicacy of Ceylon. Works in everything from apple pie to cinnamon rolls to French toast.
