How to brew it

Beyond the cup

Reduce into a deep purple syrup for cheesecake, pancakes, or swirling into yogurt. Steep into cream for a berry-violet ice cream base. Freeze into the most intensely berry popsicles you’ve ever made. Brew strong and use as a cocktail base — it stands up to gin, vodka, and sparkling wine.

What’s in it

Every herb in the blend, and where to read about it on its own.

  • Herb · Caffeine-free

    Hibiscus

    Hibiscus sabdariffa

The tart red one, and the ingredient whose colour is the point: those anthocyanins make a cup that is genuinely ruby, not brown. Hibiscus has been studied more than almost any other herbal infusion, and unusually the studies used the tea itself rather than an...

    Tart, cranberry-like, fruity, deeply colored

  • Herb · Caffeine-free

    Elderberry

    Sambucus nigra

The dark berry of the cold season in European tradition — elderberry syrup is one of those things a grandmother made. Its anthocyanins are the same class of pigment as hibiscus's, which is the chemistry behind how often the two are blended. One honest note...

Deep berry, slightly tart, earthy undertones, wine-like when concentrated

    Orange Peel

    Citrus sinensis

Previously dismissed as 'just citrus,' orange peel contains hesperidin — a flavanone with genuine anti-inflammatory and cardiovascular evidence — plus polymethoxyflavones that show remarkable metabolic activity in preclinical studies. In Traditional Chinese Medicine, aged tangerine peel (chen pi) is one of the most prescribed herbs....

    Rosehips

    Rosa canina

The fruit of the wild rose, containing 20 to 40 times more vitamin C than oranges in its fresh form. Here's the catch: most of that vitamin C degrades during drying and steeping. What the tea actually delivers is proanthocyanidins — water-extractable tannin antioxidants —...

  • Fruit · Caffeine-free

    Blueberry

    Vaccinium spp.

Dried blueberries and sometimes the leaf — seven products carry one or the other. The berry brings a deep, slightly winey sweetness and the anthocyanins that make a cup go purple-red; the leaf, like strawberry leaf, brings tannin and body rather than fruit. For a...

Deep, winey sweetness with a soft acidity; stains the cup purple-red

    Strawberry

    Fragaria × ananassa

Dried strawberry pieces and sometimes the leaf — ten products carry one or the other, and they are not the same ingredient. The fruit brings sweetness and that unmistakable jammy smell; the leaf brings a mild, slightly tannic, tea-like character and no strawberry flavour at...

  • Fruit · Caffeine-free

    Raspberry

    Rubus idaeus

The dried fruit — distinct from raspberry leaf, which is a herbal ingredient with its own profile and no raspberry flavour whatsoever. The berry is sharp, perfumed and fragile: it brings the highest, brightest note in a berry blend, and it is the first thing...

Sharp, bright and perfumed; the highest note in a berry blend and the first to fade

    Apple

    Malus domestica

Dried apple pieces are the workhorse of fruit tea, and twenty-six products here carry them — more than any other fruit. They are doing a structural job rather than a flavour one: apple gives a fruit infusion its body and a mild background sweetness, and...

Mild, sweet and lightly tart, with a soft body; it rounds out a blend rather than leading it

    Black Currant

    Ribes nigrum

The most intensely flavoured berry in this shop, and the one that most needs company. Raw blackcurrants have a strong, tart flavour that has to be moderated by combining them with other fruit — which is exactly what a blend does. Five products carry them....

Strong, tart and deeply winey; too intense to stand alone, which is why it is always blended

    Saskatoon Berry

    Amelanchier alnifolia

The most local fruit in this shop, and one most Canadians outside the Prairies have never eaten. Saskatoons have a sweet, nutty taste — closer to almond and blueberry together than to either alone — and they grow wild right across western Canada, including around...

Sweet and nutty, with an almond note behind the berry — less sharp than a blueberry

    Blackberry

    Rubus spp.

Both the fruit and the leaf appear in this shop's blends, and they are not the same ingredient. The berry is deep, winey and a little tannic; the leaf, like raspberry and strawberry leaf, brings tannin and body with no berry flavour at all, which...

Always handy

I use dillweed often. This dill is fresh and has a nice aroma. I use it in marinades, salad dressings, and on fish. Good stuff.
