Beyond the cup
The mole tea. Steep strong into cream for a spiced hot chocolate that bridges Indian chai and Mexican chocolate traditions. Infuse into a glaze for pork ribs or chicken thighs — the cocoa and chile create depth you can’t get from a spice jar alone. Brew a concentrate and stir into chili con carne for a secret weapon. Use as a poaching liquid for dark chocolate truffles.
