How to use it

Strip leaves from the stem and scatter over lamb, potatoes, or focaccia before roasting. Simmer a sprig in soups, stews, or braised beans — remove before serving. Infuse in olive oil for a week to make rosemary oil. Grind in a mortar for the freshest ground rosemary. The needles hold up to high heat better than almost any other herb. Rub on lamb, pork, or chicken before roasting — one teaspoon per pound. Stir into focaccia dough, roasted potatoes, or white bean soup. Mix into olive oil with garlic for instant marinade. Ground rosemary dissolves into sauces and batters — add to bread dough, shortbread, or lemon-rosemary cake.
