How to brew it

Steep 5–7 minutes
Use 1–2 tsp per 8oz
Cannot over-steep: no tannins, so no bitterness however long you leave it

Beyond the cup

Steep into cream for a hazelnut-almond custard base — think Nutella panna cotta. Brew strong and add to brownie batter for an amaretto twist. Reduce with sugar into a syrup for affogato or cocktails. The tea version of an after-dinner digestif.
