How to use it

The pepper grinder upgrade. Five layers of flavor: the sharp heat of black, the earthy bite of white, the bright freshness of green, the fruity sweetness of pink, and the warm clove depth of allspice. Load your mill and use on everything — it makes ordinary pepper feel one-dimensional. Especially great on grilled meats, roasted vegetables, and pasta where you want complexity without adding more spices.

    Allspice

    Pimenta dioica

One berry that tastes like three spices — cinnamon, nutmeg and clove at once, with a peppery, woody edge. The English were calling it allspice by 1621 for exactly that reason, and it confuses people to this day: it is a single dried berry, not...

    Black Pepper

    Piper nigrum

The dried unripe berry of a climbing vine — the mill on every table, and the most travelled object in any kitchen. Black, white and green pepper are all the same berry, picked at different moments and treated differently: black is picked unripe and dried...

Warm, woody, resinous and sharp; the bite is piperine, roughly a hundredth as potent as capsaicin

    White Pepper

    Piper nigrum

The same berry as black pepper, picked ripe and treated completely differently. White pepper is made by retting: the ripe berries are soaked in water for about a week until the flesh softens, then rubbed clean down to the pale inner seed. That soaking is...

    Pink Peppercorns

    Schinus terebinthifolia

Not pepper. Pink peppercorns are the dried drupes of a South American tree in the cashew family, and they only look the part — the flavour is fruity, resinous and faintly sweet with a mild pepper-like bite, nothing like the heat of Piper nigrum. Six...

    Green Peppercorns

    Piper nigrum

The same berry as black pepper, picked unripe and preserved before it can oxidise and darken — which is why it stays green. Fresher and brighter than black pepper, with a herbal, almost grassy note and a milder heat. Two products carry them, both peppercorn...

What it goes with

This blend bridges to more teas than any other pepper. Start with our Iron Goddess of Mercy oolong for the woody-spicy notes, then try our Earl Grey — the allspice warmth and pink pepper's fruity lift play beautifully against bergamot.

Always handy

I use dillweed often. This dill is fresh and has a nice aroma. I use it in marinades, salad dressings, and on fish. Good stuff.
