How to use it

White pepper, whole — for cooks who want to grind fresh. Delivers cleaner, sharper white pepper flavor than the pre-ground version because the monoterpenes haven't had time to escape. The same earthy bite and invisible-pepper functionality, but noticeably more aromatic. Essential for hot and sour soup, cream sauces, and wonton filling. Grind in a dedicated mill — the fermented flavor will linger. The invisible pepper. Use in cream sauces, white soups, mashed potatoes, and anywhere you want heat without black specks. Essential in Chinese hot and sour soup and French béchamel. Sharper and more direct than black pepper — less aromatic, more bite. A quarter teaspoon goes a long way.

What it goes with

Same pairing logic as our ground white pepper, but the fresher grind makes the floral oolong bridge more noticeable. Brew our Iron Goddess of Mercy oolong alongside Chinese dishes or cream sauces — the delicate floral notes are a natural complement to white pepper's subtlety.
