How to brew it
- 212°F / 100°C
- Steep 5–7 minutes
- Use 1–2 tsp per 8oz
- Cannot over-steep: no tannins, so no bitterness however long you leave it
Beyond the cup
Steep into cream for a gingerbread crème brûlée — the cinnamon and clove infuse beautifully into dairy fat. Infuse into melted butter for spiced shortbread that tastes like Christmas morning. Makes an incredible gingerbread latte — brew strong and add steamed milk and a drizzle of honey. Caffeine-free, so it’s the perfect after-dinner holiday cup.
