Hickory BBQ Seasoning provides a balance of salt, sweet and hickory to give steaks a smoke-kissed flavor, whether you're cooking on charcoal, gas or even the stovetop. It can also be used as a base to flavor a homemade barbecue sauce.

How to use it

Pure smoke in a jar. Rub generously on pork shoulder, beef ribs, or brisket — one tablespoon per pound — and smoke low and slow. The hickory powder and smoked paprika give you smokehouse depth even if you're cooking in the oven. The sugar builds bark. Also great stirred into baked beans, chili, or a smoky mac and cheese.

    Sea Salt

    Sodium chloride

Seawater, evaporated. It is in twenty-five products here, which understates it — salt is the ingredient that makes every other ingredient taste like itself. Fine sea salt dissolves on contact and is the everyday cooking salt: a teaspoon in a soup pot, half a teaspoon...

    Chile

    Capsicum annuum

Dried chile peppers, whole, crushed or ground — the generic heat in twenty-nine products here, from curry powders to jerk to Tex-Mex. Heat comes from capsaicin and is measured in Scoville heat units; the shop's blends name theirs where the supplier gives a figure. The...

Heat first, then a dry, fruity red-pepper taste; the darker dried chiles run raisiny and the lighter ones bright and tannic

    Garlic

    Allium sativum

A bulb, dried and broken down to three different coarsenesses, and the single most common ingredient in this catalogue — forty-three products carry it. Granulated is coarse and blooms slowly in hot oil; minced is visible pieces that plump up in a sauce; powder disappears...

Sweet, toasty and savoury; deeper and rounder than fresh garlic, without the raw bite

    Onion

    Allium cepa

Dried onion, in three grinds: granulated blooms in oil, minced rehydrates into pieces you can see, and powder disappears into a dip or a rub. Twenty-seven products carry it. Drying takes 96 per cent of the water out and, with it, the sulfur compounds that...

    Black Pepper

    Piper nigrum

The dried unripe berry of a climbing vine — the mill on every table, and the most travelled object in any kitchen. Black, white and green pepper are all the same berry, picked at different moments and treated differently: black is picked unripe and dried...

    Smoked Paprika

    Capsicum annuum

Paprika dried over fire rather than in the sun, and a different ingredient from sweet paprika in every way that matters. In La Vera in Extremadura the peppers are dried over oak and holm-oak fires for ten to fifteen days and stirred daily, under a...

    Turbinado Sugar

Large golden crystals, made from crystallised, partially evaporated cane juice spun in a centrifuge to remove part of the molasses — which is where the name comes from, the turbine. Four products carry it. The reason to use it rather than brown sugar in a...

    Hickory Smoke

    Carya spp.

Smoke flavouring, in powder form. Two products carry it. It is worth being plain about what this is: liquid smoke — real wood smoke, condensed and captured in water — dried onto a carrier. It is not a chemical imitation of smoke; it is smoke....

What it goes with

The smokiest rub in the shop calls for the smokiest tea. Our Lapsang Souchong is smoke-dried over pine — different wood, same guaiacol compounds. Brew alongside smoked ribs for a full smoke experience. Our Smoked Maple Oolong bridges both the smoke and the sugar.

Always handy

I use dillweed often. This dill is fresh and has a nice aroma. I use it in marinades, salad dressings, and on fish. Good stuff.
