    Oregano

Origanum vulgare; Mexican oregano is Lippia graveolens

Two different plants sold under one name, and the difference matters. Mediterranean oregano is a mint-family herb — pungent, warm, peppery, a little bitter and piney, and it is the pizza herb. Mexican oregano is a verbena, unrelated, and it is bolder, more citrusy and...

Mediterranean: pungent, warm, peppery and a little piney. Mexican: bolder, citrusy, earthy, a touch of anise

    Thyme

    Thymus vulgaris

A small woody-stemmed Mediterranean shrub, dried. Thyme is the first herb into a stew and the one that survives longest in it — unlike most dried herbs, it improves with long cooking rather than fading. Eleven products carry it, from poultry seasoning and herbes de...

Warm, earthy, woody and resinous, with a minty, peppery edge that deepens as it cooks

    Garlic

    Allium sativum

A bulb, dried and broken down to three different coarsenesses, and the single most common ingredient in this catalogue — forty-three products carry it. Granulated is coarse and blooms slowly in hot oil; minced is visible pieces that plump up in a sauce; powder disappears...

Sweet, toasty and savoury; deeper and rounder than fresh garlic, without the raw bite

    Basil

    Ocimum basilicum

Sweet basil, dried — the pizza herb, and the one people are most surprised to find works dried at all. It does, but differently: drying takes the fresh leaf's bright anise-clove top note down and leaves something sweeter and more peppery underneath, which is why...

Sweet and peppery-green with a faint clove and anise note; softer dried than fresh

    Savory

    Satureja hortensis

Thyme's peppery cousin — somewhere between mint and thyme, with a piney bite. For most of this country it is an obscure herb; in Atlantic Canada it is not obscure at all. In Newfoundland summer savory is the dressing herb, used the way sage is...

A cross between mint and thyme, with a pungent piney flavour and peppery hints

    Marjoram

    Origanum majorana

Oregano's gentler cousin — the same genus, a much softer voice. Where oregano is pungent and a little bitter, marjoram is sweet, honeyed and faintly citrus, with a touch of pine and a hint of clove. It is the sausage herb and the stuffing herb:...

Sweet and gentle, honeyed with sweet pine and citrus; a little like oregano with the edges taken off

    Parsley

    Petroselinum crispum

The most taken-for-granted herb in any kitchen, and the one doing more work than it gets credit for: parsley is not a garnish, it is the clean green note that lifts everything heavy sitting beside it. Dried parsley is milder than fresh and keeps its...

What it goes with

Italian food calls for a tea with personality. Brew our Darjeeling alongside — the basil in this blend shares linalool with the tea. For heartier dishes like Bolognese, our Assam or English Breakfast has the tannins to match the richness.

Always handy

I use dillweed often. This dill is fresh and has a nice aroma. I use it in marinades, salad dressings, and on fish. Good stuff.
