Jamaican Jerk Seasoning is a sweet, hot and tangy blend that imparts the classic Caribbean flavors of allspice, thyme and chiles. This sweet, savory, slightly spicy mixture can be dry rubbed or combined with water, citrus juice or rum to make a paste or marinade. It browns to a satisfying coat of flavor.

How to use it

Caribbean heat. Mix two tablespoons with lime juice, soy sauce, and scotch bonnet to make a paste. Coat chicken, pork, or goat and marinate for at least four hours — overnight is best. Grill over charcoal for authentic jerk. The allspice is the soul of this blend — that warm, clove-like depth under the heat. Also great on grilled pineapple and roasted sweet potato.

    Allspice

    Pimenta dioica

One berry that tastes like three spices — cinnamon, nutmeg and clove at once, with a peppery, woody edge. The English were calling it allspice by 1621 for exactly that reason, and it confuses people to this day: it is a single dried berry, not...

    Thyme

    Thymus vulgaris

A small woody-stemmed Mediterranean shrub, dried. Thyme is the first herb into a stew and the one that survives longest in it — unlike most dried herbs, it improves with long cooking rather than fading. Eleven products carry it, from poultry seasoning and herbes de...

    Chile

    Capsicum annuum

Dried chile peppers, whole, crushed or ground — the generic heat in twenty-nine products here, from curry powders to jerk to Tex-Mex. Heat comes from capsaicin and is measured in Scoville heat units; the shop's blends name theirs where the supplier gives a figure. The...

    Paprika

    Capsicum annuum

What it goes with

The allspice in jerk seasoning shares eugenol with the jasmine flowers in our Jasmine tea — same molecule, completely different world. Brew it iced alongside jerk chicken for something unexpected. For a bold, tannin-heavy palate cleanser, our Assam with a splash of milk handles both the heat and the fat.

Always handy

I use dillweed often. This dill is fresh and has a nice aroma. I use it in marinades, salad dressings, and on fish. Good stuff.
