  • Steep 3–5 minutes
  • Use 1 tsp per 8oz
  • Re-steep three or four times; it changes character with every round

Beyond the cup

The gongfu tea. Steep this one multiple times – each infusion reveals new layers, from orchid to honey to mineral. Infuse into cream for a floral custard or panna cotta that tastes like nothing else. Cold brew 8–12 hours for a clean, sweet iced tea. Grind dried leaves with sea salt and Szechuan pepper for a finishing salt on steamed fish.
