Mesquite Blend is lighter and sweeter than our Hickory Blend and a popular choice when crafting any Southwestern or Texas-style barbecue. Use as a rub or marinade for dark, rich meats, such as lamb, goose, duck and thick cuts of beef.

How to use it

Southwestern smoke. The go-to rub for Texas-style brisket, fajitas, and anything with dark, rich meat. Two tablespoons per pound — rub and rest for at least two hours. The rosemary and sage give it an herbal backbone that separates it from the sweeter BBQ blends. Also great on lamb, duck, and thick-cut pork chops. Mix with oil for a quick fajita marinade.

What’s in it

Every herb in the blend, and where to read about it on its own.

    Garlic

    Allium sativum

A bulb, dried and broken down to three different coarsenesses, and the single most common ingredient in this catalogue — forty-three products carry it. Granulated is coarse and blooms slowly in hot oil; minced is visible pieces that plump up in a sauce; powder disappears...

Sweet, toasty and savoury; deeper and rounder than fresh garlic, without the raw bite

  • Spice · Caffeine-free

    Onion

    Allium cepa

Dried onion, in three grinds: granulated blooms in oil, minced rehydrates into pieces you can see, and powder disappears into a dip or a rub. Twenty-seven products carry it. Drying takes 96 per cent of the water out and, with it, the sulfur compounds that...

Toasty, sweet and savoury; none of raw onion's sharpness

  • Spice · Caffeine-free

    Paprika

    Capsicum annuum

Dried sweet red peppers, ground. It is in twenty-eight products here mostly for colour and body — paprika gives a rub or a stew its red without adding heat, and it carries a soft, sweet pepper flavour that fills in the gaps between louder spices....

Sweet red pepper, no heat, vivid colour; the smoked one adds deep oak smoke

    Cumin

    Cuminum cyminum

A small ridged seed with a deep, earthy, faintly smoky smell — cuminaldehyde is the compound doing most of it. Cumin is one of the oldest travelling spices there is, and in this catalogue it is one of the busiest: twenty-three products carry it, which...

Deep, earthy, warm, a little smoky and bitter, with a musky edge

    Chile

    Capsicum annuum

Dried chile peppers, whole, crushed or ground — the generic heat in twenty-nine products here, from curry powders to jerk to Tex-Mex. Heat comes from capsaicin and is measured in Scoville heat units; the shop's blends name theirs where the supplier gives a figure. The...

Heat first, then a dry, fruity red-pepper taste; the darker dried chiles run raisiny and the lighter ones bright and tannic

    Black Pepper

    Piper nigrum

The dried unripe berry of a climbing vine — the mill on every table, and the most travelled object in any kitchen. Black, white and green pepper are all the same berry, picked at different moments and treated differently: black is picked unripe and dried...

Warm, woody, resinous and sharp; the bite is piperine, roughly a hundredth as potent as capsaicin

    Mustard

    Sinapis alba, Brassica juncea

Seed and powder, from two related plants: yellow mustard (Sinapis alba), which is mild, and brown or oriental mustard (Brassica juncea), which is hot. Dry mustard is not hot at all until it is wet — water sets off a reaction between the enzyme myrosinase...

Sharp, nose-tingling heat once wet; before that, a dusty, faintly sweet, earthy powder

    Sage

    Salvia officinalis

The name says it: Salvia comes from the Latin salvare, to save. Sage carries rosmarinic acid, carnosic acid and thujone, and it has been studied for memory in both younger and older adults — the ingredient guide summarises those trials. More practically for most people,...

Warm, earthy, slightly peppery, camphoraceous, savory — the classic Thanksgiving herb

Learn more Sold on its own

  • Salt · Caffeine-free

    Sea Salt

    Sodium chloride

Seawater, evaporated. It is in twenty-five products here, which understates it — salt is the ingredient that makes every other ingredient taste like itself. Fine sea salt dissolves on contact and is the everyday cooking salt: a teaspoon in a soup pot, half a teaspoon...

Clean salinity with nothing else in the way

  • Herb · Caffeine-free

    Rosemary

    Salvia rosmarinus

A resinous Mediterranean shrub whose name means dew of the sea, and the one herb in this shop that is literally about memory. It is strong — the oil runs 10 to 20 per cent camphor — and it is the herb most often used...

Piney, resinous and camphor-sharp, with a woody-minty edge

  • Spice · Caffeine-free

    Tomato

    Solanum lycopersicum

Dried tomato powder, in five products — all of them savoury blends. It is in there for umami: tomato is one of the richest ordinary sources of glutamate, so a spoonful of tomato powder in a seasoning mix makes everything taste more like itself without...

Savoury and umami-rich with a mild acidity; it deepens a blend rather than tasting of tomato

    Hickory Smoke

    Carya spp.

Smoke flavouring, in powder form. Two products carry it. It is worth being plain about what this is: liquid smoke — real wood smoke, condensed and captured in water — dried onto a carrier. It is not a chemical imitation of smoke; it is smoke....

Bacon-like woodsmoke, direct and strong; it reads immediately as barbecue

What it goes with

Mesquite smoke and Lapsang Souchong smoke share the same phenolic compounds — different wood, same chemistry. Brew alongside brisket or fajitas. The tomato powder in this blend also shares a compound with our Assam that's one of tea's most potent odorants — try a strong Assam with milk for a malty counterpoint.

Always handy

I use dillweed often. This dill is fresh and has a nice aroma. I use it in marinades, salad dressings, and on fish. Good stuff.
