The Mediterranean shortcut. Toss with olive oil and coat chicken, fish, lamb, or vegetables before roasting or grilling. One tablespoon per pound of protein. Mix into hummus, stir into yogurt for a quick dip, or whisk into a lemon-olive oil vinaigrette. The lemon peel and coriander keep it bright while the rosemary and oregano add herbal depth. Mild heat — approachable and versatile.

What’s in it

Every herb in the blend, and where to read about it on its own.

    Garlic

    Allium sativum

A bulb, dried and broken down to three different coarsenesses, and the single most common ingredient in this catalogue — forty-three products carry it. Granulated is coarse and blooms slowly in hot oil; minced is visible pieces that plump up in a sauce; powder disappears...

Sweet, toasty and savoury; deeper and rounder than fresh garlic, without the raw bite

  • Spice · Caffeine-free

    Onion

    Allium cepa

Dried onion, in three grinds: granulated blooms in oil, minced rehydrates into pieces you can see, and powder disappears into a dip or a rub. Twenty-seven products carry it. Drying takes 96 per cent of the water out and, with it, the sulfur compounds that...

Toasty, sweet and savoury; none of raw onion's sharpness

    Chile

    Capsicum annuum

Dried chile peppers, whole, crushed or ground — the generic heat in twenty-nine products here, from curry powders to jerk to Tex-Mex. Heat comes from capsaicin and is measured in Scoville heat units; the shop's blends name theirs where the supplier gives a figure. The...

Heat first, then a dry, fruity red-pepper taste; the darker dried chiles run raisiny and the lighter ones bright and tannic

    Lemon Peel

    Citrus x limon

Dried lemon zest, granulated — pure lemon flavour with none of the moisture, which is precisely what makes it useful. A fresh lemon brings acid and water along with the aroma; dried peel brings only the aroma, so it can go into a dry rub,...

Bright, pure lemon; dry, with no juice

    Mustard

    Sinapis alba, Brassica juncea

Seed and powder, from two related plants: yellow mustard (Sinapis alba), which is mild, and brown or oriental mustard (Brassica juncea), which is hot. Dry mustard is not hot at all until it is wet — water sets off a reaction between the enzyme myrosinase...

Sharp, nose-tingling heat once wet; before that, a dusty, faintly sweet, earthy powder

  • Spice · Caffeine-free

    Coriander

    Coriandrum sativum

The round, ridged seed of the same plant whose leaf is cilantro — and it tastes nothing like it. Where the leaf is green and divisive, the seed is warm, citrusy and floral, closer to orange peel than to anything herbal. That is why plenty...

Warm, citrusy and floral, a little sweet — orange peel and pepper together

    Cumin

    Cuminum cyminum

A small ridged seed with a deep, earthy, faintly smoky smell — cuminaldehyde is the compound doing most of it. Cumin is one of the oldest travelling spices there is, and in this catalogue it is one of the busiest: twenty-three products carry it, which...

    Oregano

Origanum vulgare; Mexican oregano is Lippia graveolens

Two different plants sold under one name, and the difference matters. Mediterranean oregano is a mint-family herb — pungent, warm, peppery, a little bitter and piney, and it is the pizza herb. Mexican oregano is a verbena, unrelated, and it is bolder, more citrusy and...

Mediterranean: pungent, warm, peppery and a little piney. Mexican: bolder, citrusy, earthy, a touch of anise

    Bell Pepper

    Capsicum annuum

Dried sweet pepper — the same species as every chile in this shop, sitting at zero on the Scoville scale. It is in nine products for colour and for a mild roasted sweetness that fills out a blend without adding heat, and it is the...

Sweet, mild and vegetal-fruity, faintly roasted; no heat at all

  • Herb · Caffeine-free

    Rosemary

    Salvia rosmarinus

A resinous Mediterranean shrub whose name means dew of the sea, and the one herb in this shop that is literally about memory. It is strong — the oil runs 10 to 20 per cent camphor — and it is the herb most often used...

What it goes with

Coriander's linalool dominates this blend — and linalool is Darjeeling's signature compound. Brew a cup alongside grilled Mediterranean chicken or fish. For a citrus echo, our Earl Grey matches the lemon peel beautifully.

Always handy

I use dillweed often. This dill is fresh and has a nice aroma. I use it in marinades, salad dressings, and on fish. Good stuff.
