How to use it
Mexico's everyday chile. Guajillo is the dried mirasol — fruity, tangy, with a berry-like sweetness and almost no heat. The backbone of salsa roja, enchilada sauce, adobo marinades, and pozole. Rehydrate in hot water and blend for sauces, or use the powder directly. Two tablespoons per cup of sauce. Also great in tamale fillings, birria broth, or blended into a vinaigrette. If ancho is the rich one, guajillo is the bright one.
What it goes with
Guajillo produces more β-damascenone — one of tea's most powerful aroma compounds — than any other chile in our collection. It comes from the same chemistry that creates honey and fruit notes in our Darjeeling. Brew a cup alongside guajillo enchiladas or birria and taste the overlap.
