How to use it
Mexico's dark chile. Pasilla negro is a dried chilaca — earthy, berry-like, with almost no heat and a deep, complex flavor that anchors mole negro and black bean sauces. Rehydrate and blend for sauces, or use the powder in enchilada sauce, chili, or black bean soup. Two tablespoons per cup of sauce. The berry-like sweetness pairs beautifully with chocolate in mole. Also great stirred into braised meats or black bean dip.
What it goes with
Pasilla produces more β-ionone — the violet-scented compound in our Darjeeling — than any other chile we carry. Its 539 µg/g of β-carotene is the highest of any Mexican dried chile. Brew a cup of Darjeeling alongside mole negro or pasilla-sauced enchiladas for the strongest carotenoid bridge in the collection.
